Thanksgiving is just one day away! If you’re still scrambling for something to bring to dinner, we have the PERFECT recipe that will impress. Straight from Gloria’s kitchen is this super simple recipe for Cornbread Stuffing.
- 1 Pan or “Loaf” of cornbread
- 1 Package or 6 cups of seasoned & cubed stuffing croutons
- 1 stick of butter or margarine
- 1 head of celery (diced)
- 1 large white onion (diced)
- 2 – 3 cups of chicken broth (to taste)
- Your favorite spices (to taste)
Makes: Two 10″ x 8″ pans, or enough to stuff a turkey
Directions: Preheat oven to 400 degrees.
Melt the stick of butter over medium-high heat in a large skillet or frying pan. Add the diced celery and cook until the celery begins to clarify. Add the diced onions to the pan and cook until the onions begin to clarify. Remove from heat and set aside. Break apart the corn bread into bite sized pieces into a large mixing bowl. Add the stuffing croutons and fold in the celery and onion mixture. Once all your ingredients are mixed, pour chicken broth over the mixture until it is coated.
You can add your favorite seasonings and spices to taste. Once you’re happy with the flavors, bake at 400 degrees for at least 20 minutes. Check on the stuffing and add more chicken broth to keep moist. Cook for another 15 minutes or so, or until the stuffing has reached your desired crunchiness.
